Setup
Before creating your first vinification you must configure the app once. This involves the Vinification Setup page, the grape and wine items, and the wine treatment reason codes.
Vinification Setup
Search for Vinification Setup using Tell Me and fill in the fields below.
Number series and location
| Field | Purpose |

| Vinification Nos. | The number series used to assign a unique number to each new vinification document. |
| Default Location Code | The default warehouse/cellar location proposed on new vinification documents. |
Reason codes
Each wine treatment phase is posted with a dedicated reason code. The reason codes must be flagged as wine treatment reason codes (the Wine Treatment mark in the EOS WINE reason code setup).

Units of measure and lot numbering

| KG Unit of Measure | The unit of measure that represents kilograms, used for weight-based quantity conversions. |
| Liter Unit of Measure | The unit of measure that represents liters, used for volume-based quantity conversions. |
| Use Last Lot No. | When enabled, output items are pre-filled with the most recently used lot number where applicable. |
Items
Open the Item Card of each grape item you vinify. In the Vinification group set the output items that this grape produces and the calculation factors.
Output item mapping
For the grape item, point each output to the corresponding item:
- Stems, Destemmed Grape, Grape Pomace, Grape Must, Fermenting Wine, Wine Lees, Finished Wine, Reserve Wine, Downgraded Wine, Treated Grape Must.
When you later select this grape on a vinification document, these output items are copied automatically into the document.
Calculation percentages

| Yield % | Expected percentage of grape must or wine obtained from the total grape mass. |
| Surplus % | Expected percentage of cellar surplus produced beyond the standard yield. |
| Stems % | Expected percentage of the grape mass consisting of stems. |
| Grape Pomace % | Expected percentage of grape pomace remaining after pressing. |
Date calculation formulas
| Field | Purpose |

| Vinification Date Calculation | Date formula (e.g. 7D) added to the document date to obtain the vinification date. |
| Fermentation Date Calculation | Date formula added to the document date to obtain the fermentation date. |
| Wine Prod. Date Calculation | Date formula added to the document date to obtain the wine production date. |
White vs. red wine
The grape item’s Vinification Type (White or Red) determines processing rules. The Coal Treatment option on a vinification is only available for white grapes.
Lot number generation
To auto-generate lot numbers for output items, configure on each output item either:
- a Lot No. Formula (EOS WINE lot formula), or
- a Lot Nos. number series.
Item categories
For sales traceability, open the Item Category Card of the relevant categories and set the Wine Category Type:
- Grape Must, Treated Grape Must or Fermenting Wine.
This classification controls which vinifications a sold item can be linked to.
